Vegan Coconut Banana Bread

Ingredients

  • 3 ripe bananas
  • 250g plain flour
  • 35g CardiOat™ High Strength Oat Powder
  • 60ml canned coconut milk
  • 140ml dairy free milk
  • 100g desiccated coconut
  • 1 tbsp of vanilla extract
  • 2 tbsp of maple syrup
  • 2 tsp of baking powder
  • 30ml melted coconut oil
  • 1 tsp of ground cinnamon

Method

  1. Begin by preheating the oven to 180°C and greasing or lining a loaf tin.
  2. In a large mixing bowl, mash the bananas and combine with the coconut milk, dairy free milk, vanilla extract, maple syrup and melted coconut oil.
  3. Now in a separate bowl combine the plain flour, CardiOat™ Powder, demerara sugar and ground cinnamon.
  4. Add the wet ingredients into the dry and combine well before pouring into the loaf tin.
  5. Sprinkle with a handful more of desiccated coconut.
  6. Cover with foil allowing enough room for the loaf to rise and bake in the oven for approximately 55 minutes or until a toothpick comes out clean.
  7. Allow to cool before carefully removing from the tin.
  8. Slice and enjoy!
