Ingredients
- 3 ripe bananas
- 250g plain flour
- 35g CardiOat™ High Strength Oat Powder
- 60ml canned coconut milk
- 140ml dairy free milk
- 100g desiccated coconut
- 1 tbsp of vanilla extract
- 2 tbsp of maple syrup
- 2 tsp of baking powder
- 30ml melted coconut oil
- 1 tsp of ground cinnamon
Method
- Begin by preheating the oven to 180°C and greasing or lining a loaf tin.
- In a large mixing bowl, mash the bananas and combine with the coconut milk, dairy free milk, vanilla extract, maple syrup and melted coconut oil.
- Now in a separate bowl combine the plain flour, CardiOat™ Powder, demerara sugar and ground cinnamon.
- Add the wet ingredients into the dry and combine well before pouring into the loaf tin.
- Sprinkle with a handful more of desiccated coconut.
- Cover with foil allowing enough room for the loaf to rise and bake in the oven for approximately 55 minutes or until a toothpick comes out clean.
- Allow to cool before carefully removing from the tin.
- Slice and enjoy!
